Hi, I get the following error, any idea how to fix it?

1. OpenCart Version 3.0.3.8
2. Used Template/Theme: Default
3. (Additional) Installed Extension(s): only 5
4. (Additional) Installed Translation(s): None

PHP Notice: Undefined index: product_id in ...storage/modification/catalog/controller/product/product.php on line ...

One of your 5 extensions most likely modifies the product.php causing this error. Disable your extensions one by one, to see which one causes it.

Thanks, what's the best way to reproduce the error after disabling my extensions one by one?

Just do what you did before the produced the error in the first place. If you didn't see the error and only found it in your error logs check in your web access log for a matching request.

Not important but still should get whatever extension is causing them fixed versus just trying to hide them.
