Hi,
I've been reading a number of posts detailing errors that users have encountered when upgrading to v4.x

I'm planning on upgrading from v2.1.0.2 to the most stable, but highest version that users would recommend? Which version should I go for?
Also, is there documentation relating to completing the tasks to perform the upgrade?

Opencart v2.1.0.2
Default Template
Category & Product based shipping , Google Recaptcha, TDM Custom Tab Pro extensions

Well, if you have some Extensions installed in your present Shop, better de-install all of them first, before trying an Upgrade.
And I would not try to upgrade, but install a clean Version of the one mentioned above, and then get the User- and Product- Data from the old Version Database into the new Version DB, to make sure, to only have, what you need. The v.3.x Version mentioned above is the most reliable, according to what have been published around here. I assume, that someone around here would be able and willing, to tell you, on how to get the Products and Users into the new Version DB as well, possibly as a paid Job. Good Luck! ;)

What would you need to do to do a clean install?

How would you preserve the customer, order history & product databases with a clean install?

to be safe On the same server setup a subdomain and install a opencart there. And then install all your required extensions one by one.

You can export tables from your database.
