I kept fiddling with the colors but my theme consistently looks bad. Anybody here knows of a color combination for backgrounds, text, etc. to make it look good?

The color scheme will be the least of your problems. You have chosen one of the worst web themes because it is not compliant with OpenCart standards, and it's bloated, and it will clash with many other 3rd party extensions. If you are serious about ecommerce, use a proper and slim SEO-friendly web theme. No end user likes bloated menus and animations when visiting a web site. It has to be fast, and the end user needs to find the relevant information and products quickly without distractions.

To answer the question. Silver is like black, grey or white - everything works well - even gold if used correctly, but the skill / talent is the 'used correctly' part of that statement.

I can't seem to find out what goes well with what, and it just turns out looking bad.The best way is to try out different color schemes. You can use a color picker tool (available on most desktop operating systems) to find the exact color values you like, picked from demo theme pages, and then build your own stylesheet.css. Perhaps these can give you some ideas:
