The below change will allow to subtract stock when an order is completed.
Admin > Catalog > Products > Data
Then Edit the Stock Status or
Change the field 'Quantity' and also change 'Subtract Stock = Yes'
The below change will allow customer to order a product only if quantity is more than 0
Admin > System> Settings> Store> Option > Stock
-- Show Out Of Stock Warning = Yes
-- Stock Checkout = No
Admin > Catalog > Products > Data
