We are running OpenCart 2.0.3.1 running PHP 5.3 and MySQL version 5.5.52-cll
We need to upgrade our OS to CentOS 7. Which offers PHP 5.5, 5.6, and 7.0 with the possibility of installing 7.1 and 7.2
with MySql Ver 15.1 Distrib 10.2.14-MariaDB, for Linux (x86_64) using readline 5.1.
I need some advice. Can we make the leap to CenOS 7 without risking an upgrade from OpenCart 2.0.3.1?
Thank you for your advice. It does appear that OpenCart 2.0.3.1 is compatible with PHP 7.0 but I don't know what the risks are on this. I am concerned about the MySQL database migration. Any help appreciated

OC 2.0.3.1 runs fine on PHP 7 and OS doesn't matter much.

PHP 5.6 & 7.0 are end of life later this year. http://php.net/supported-versions.php
You may have a longer leeway being on Centos (with regards to 7.0.x) as they backport security patches, but if at all possible - get off 5.3 immediately. You're running a large number of unpatched vulnerabilities!
It's safe to assume you're on a much older version of Centos, which is also probably out of support - there have been some nasty vulnerabilities in Apache not too long ago, also.
5.3 has been dead since 2014. http://php.net/eol.php
