I would like to setup my website with Paypal so that the Order & Paypal payment is put on hold until I manually execute it. The reason is that the products require special shipping that is finalized once the customer has bought the item. The payment needs to be put on hold in case the customer does not agree to purchase once the price has been completed. I am open to any other options.

On another note - what is the order status item used for on the Order Status drop down on the Paypal OpenCart screen?

Order status drop-down is the status order will be updated after succeful payment. In your case I'd use some other payment method first and then inform customer (by email) the whole price which should be payed to your account.

and auto hold means you want to use the "Authorization" option for method. Be warned you only have 3 days to hold before paypal cancels the payment.
