I have a quick question ... if I am looking to only sell items to individuals in the US and shipping those good only to addresses in the US, should I delete all other countries/currencies, etc? Or is there a better way to simply not utilize these options? I just don't want to allow site users to purchase items with free shipping to be sent anywhere in the world!

Luckily, there's a quicker way to delete all the countries than one at a time:

Yup, just remember that if you have a prefix for your tables, you need to add that to the table names as well
