text in order and email page for customer

hi all, i have a request from customer for a litlle customisasion of admin and email template, in uploaded pic can see what is need to must do it for new versions of OC. for my current version i will be happy to know how to do it my self. i know OC well and can change code if someone tell me properly how to make this. best regards from Bulgaria, to all team of OC . version of current OC is Version 2.1.0.2
