I would love to see a developer integrate Apple Pay - https://developer.apple.com/apple-pay/
This is something I am sure a lot of people would purchase!
My Stripe Payment Gateway Pro extension supports Stripe's Apple Pay integration, and as a bonus, Stripe doesn't require you to have an Apple Developer Account for it (which costs $99 per year).
I'm also working on an update for my Braintree Payment Gateway Pro extension to support their Apple Pay integration. It does require an Apple Developer Account, but it's just about ready if any users want to try it. Just e-mail me your order number and I can send you the pre-release version to test.
As for a stand-alone payment method, I'm not sure someone will make an Apple Pay payment method separately. I've considered it, but because it only works if the customer is using the latest version of Safari and has an iOS device with the latest iOS version, it's pretty limited in the customers it can accept. It also doesn't process the payment itself, so you need to pass the data on to your specific processor anyway.

Let's be honest, no serious online retailers use Stripe or Braintee (don't get me wrong they are great when you are starting up, I used to use them myself) but when you are processing thousands of orders a month it doesn't make sense with the fees they charge. (Stripe doesn't even support 3D Secure).
(I am using SagePay for Gateway, WorldPay for Merchant Bank)

I see --- I had assumed you weren't a large-volume store, since most users of OpenCart are small business owners, so they're not processing thousands of orders a month. (I have run into some exceptions, though, like yourself.) Usually stores that have that large of a volume are not using a free open source shopping cart, and have a dedicated IT support staff to create/modify custom cart software for them, so they could implement their own Apple Pay solution.
If you don't want to use Stripe or Braintree, the only real solution would be to hire someone to modify the SagePay payment method for you. Because Apple Pay isn't a payment processor itself, the payment extension itself has to be modified so that it accepts Apple Pay, and then passes the data to your own payment processor. It's unlikely there's going to be a stand-alone Apple Pay payment method in OpenCart for this reason --- each payment extension has its own code for sending the data to its processor, so creating a solution that would work with every payment method would be incredibly difficult or impossible.
If you need to find a developer to modify your code for you, you should post a request in the OpenCart "Commercial Support" forum, which is checked by a number of OpenCart developers. You can also try checking out the OpenCart "Partners" area.
