I know that you currently can go to admin system settings, and under options, set the number of default products to show. It also effects the customer section of things.

Well I'm looking for the same thing... it would be much easier for me to run the store if I could choose between the number of lister products... nothing hardcore not to kill my database but once I'm brosing the shop through LAN view all products would be sweet
So instead of just a blanket 20 items per page
you want to be able to set
Category A - 10 items per page
Category b - 20 items per page
Category C - 8 items per page
like that?
Personally as a customer I would be annoyed by the layout change for each category I browse
