Hello,

I know how to disable gzip in the backoffice, but I can not find anywhere where the configuration is saved to disable it from command line or FTP or DB/MYSQL (if thats where it is stored). I know the config has to be saved somewhere that I can manually edit, can anyone point me in the right direction?

you probably mean this, otherways, such settings may be part of selections, by use of some SPEED-UP Extensions.
Output-wise, the .htaccess file is mostly also in charge if such, but this is not your question/problem, I guess... :D
Value 0 = no compression by default !

you can only adjust the compression direct in database using a tool phpmyadmin

it is stored in table settings (if you have a database prefix add that in front)
find field config_compression.
it holds the same number as you see in your admin.

gzip compression can also be set in your server settings if you have acces to server apache config files
