when i change the quantity of my options shouldn't it automatically change my main product quantity? i noticed when i change my product option quantity i have to manually change my main quantity for that product as well.

Well, a product can have many options, but that doesn't mean that you have an equal number of products for the total number of options.
They are related, as, you can chose if an option does affect the total number of product, but not correlated, as, x product = x options.
