Hello.

I am currently using Opencart verion 2.1.0.1 on my website.

I have configured so far a number of 8 product Options.

The prblem is , that when i try to add these options to the product i can only see 5 out of the 8 configured options.

Have you tried just typing the one you want, it doesnt show them all at the start

look here for a better Option, by enlarging the OPTION Display MAX Value.
I know, it can be done easy, but I forget, where the Number has to be changed,
but you sure find Answers here:
