Is it possible to automatically apply free priority shipping to orders over a certain amount?

Thanks Ernie, I wasn't sure if there was an option buried away on the core OC somewhere that could be set up to do this.

The built-in Free Shipping method has a Total field, where you can specify when it appears. It sounds like it should work fine for you. You can retitle the front-end text in its language file:

/catalog/language/english/shipping/free.php
