Can I vqmod all files that contain a certain phrase ?

Is it possible to alter all files (unknown file names) that contain a certain phrase.

i.e.

        </operation>

Had time to rethink my original question.

How do I change every single file that contains
NOW()
with
custonDate

What I want to do is be able to state what date/time is used as the server (system) date/time for the database cannot be changed.

It would be easier to use an extension that already sets the time zone like http://www.opencart.com/index.php?route ... n_id=21865

Running Opencart v3.0.3.9 with multi-stores and the default template from https://www.labeshops.com which has links to all my stores.
