I am having a hard time running my Open Cart store on a shared VPS server for a fair amount of money, so I am looking into setting up my own hardware and co-locating it as it is cheaper to co-locate a decent dedicated server than rent a VPS of the same specification.
My problem lies with the fact I am not a Linux, PHP or Apache administrator. Windows, IIS and Networking on the hand is a different story. I would like to know if anyone has been able to run production Open Cart website with SSL and all the bits working perfectly fine using Windows Server Core Edition? If so, does anyone know of guides or recommendations.
Or would it be advisable to run the website on Linux and learn to use it? If this is the case, what version and does anyone have a complete guide on what is required and best practice to use?

if you are not into managing your own server, it would be better to have someone manage it for you so it is much more secure. Alternatively, you could consider installing cPanel, which would setup all the things you need for you.
Under Linux, it has been known that cPanel is the best option. Although, under windows 2012 and above, Plesk seems to b the right solution for some reason.
