I need to know where can i edit this text Estimate Shipping & Taxes,

I don't need calculate taxes on my website, i need to replace Estimate Shipping & Taxes for Estimate Shipping.

All language for the front-end is contained in /catalog/language/english/

You then find the route for the page you want -- for the Estimate Shipping & Taxes, that's on the checkout/cart page, so the language file for that text is:

/catalog/language/english/checkout/cart.php
