Unless if I misunderstand. It would be good on the admin products page to:
Put a comment to click on the folder for options or a BIG icon in the toolbar for options.
Single click to edit a product, instead of click then update..

with you 100%. This is the only part of open cart that i find really unintuitive. It took a forum post (or reading one i can't remember) before i figured out how to find those options and i'm computer savy. I also don't like having to select something, then click another button to perform the action.
