If I have the same options for several products with the stock quantity, will it subtract for any recognized item with the same options?

Example:

golf bag
option 1: golf balls qty 5
option 2: Tees qty 10

golf set
option 1: golf balls qty 5
option 2: Tees qty 10

If customer orders with either item and chooses let's say option 1, will the quantity decrease for both item options? If not, is there a mod that will do that universally if I set them to subtract stock?

No.

you'd need a mod for that. assuming "Golf Balls" and "Tees" are also products (which would hold the master stock quantity, that's where you'd want to start.
