I am having an issue with some orders of multiple items being to heavy to ship via UPS, USPS or FedEx. Is there any way for the system to recognize that multiple items may be put in several boxes for shipping? I used to use Zen Cart and it had the ability to set a maximum per package weight which I used 70lbs. If an order had multiple items over 70lbs, it would say 2 boxes/84 lbs (example) at checkout. I can't see how to handle this with OpenCart??

I think Qphoria's extensions can do this. Take a look at UPS Deluxe and FedEx Live Rates Global.

If I purchase UPS Deluxe, will it work with the other shipping mods I have installed?

Shipping methods in OpenCart are independent of one another, so each shipping method that is enabled will be presented to the customer as its own option during checkout. They cannot affect the availability of one another though, if that's what you're looking for. If you need to do that, you'd have to use something that modifies the system, like Restrict Shipping Methods
