What are the maximum dimensions that a logo can be on the default theme? I can't see this anywhere in the online manual.
there isn't. It just displays the exact same image you uploaded

If you're essentially asking how big it can be before other elements move or truncate it, then a touch under 150% of the default logo size. The default logo itself, as seen here at the top, and as seen in the cart demo, is 268x50. If you enlarge the space it occupies to as much as 402x75 it will fit but you may need to reduce its margin or padding, particularly top and left. With no such reduction it would be a-b-o-u-t 390x65.

150% is no good to me. I need to know the maximum size in pixels please (forget about aspect ratio). I'm getting someone to design a logo for my site and he needs to know the maximum width and height he can have for the logo. I will probably get a long image. I don't want to reposition anything.

You were given 402x75 as 150% of 268x50, and you were given 390x65 as a touch under 150% of 268x50. Customarily sizes are not always belabored as being in pixels. If you want the maxima wide and high, then the aspect ratio will closely follow the original default image.
If he knows what he is doing, then he can give you an image, you can try it, he can resize it, you can retry that, to tune it to the last pixel. However, if you cut it to the very last pixel before anything moves, then guess what, some browsers or versions will render it differently. Get close to the mark, let him resize it as needed, then live with it while you see it in different browsers.
If you want to play completely safe, then either (a) stick with 268 PIXELS WIDE BY 50 PIXELS HIGH, a.k.a 268x50, or (b) make a dead black test logo and fiddle with its width and height in even a simplistic paint program, then make the new logo that size.
