Hi
We have a clean install at

I want to know if there is any possibility of arranging our products like
Theme Plate, Theme Cup Tablecover, and then the plain colour products
Very similar to

Not sure what you mean. If you mean putting the plain-Jane white stuff below the colorful stuff, you can force ordering by how you name products. They're listed in MACHINE-alphabetical order (1, 100, 110, . . . 99, 101) so numbering can be tricky, but ordinary letters can be the lead characters (A, A.1, etc.) so as to arrange products your way. ("W" or "White" will follow most other colors, for example.)
Good extention at

the only drawback is, it lists all the subcategories where a given product exisits, and that is very heavy on the database

You have few enough products that you can use an export tool (JNeuhoff's works) to pull down a starting point in Excel format, rename products there in preferred order (e.g., Plate, Theme, Name), and send the result back up. There are tricks to speeding that up -- you can use a temp worksheet to set up two columns (left for prefixes to names), export both by copy/paste into ascii text where you can replace tabs with spaces, and then plant that back into the target column. Just be careful not to keep the same sort sequence when that is replanted.
