Ok, I'm located in Castle Rock, CO USA. Do I need to charge the VAT tax to clients who purchase from me in the UK? Since I don't pay taxes to the UK?

No. you don't charge the VAT tax for UK users because your shop is based in the United States. Usually, when a UK user orders some products from you online, he/she will pay an import duty which is totally beyond your control and hence nothing to worry about on your part.
