3 Newb Questions For Store Configuration in Version 4.0.2.3

Very new to OpenCart.

1. Countries defaulted to ALL Enabled on install. Is there a way to recursively disable them all rather that all 252, one by one? (I'm only wanting to show / support US in check-out.

2. How do you change the color or the blue colored bars in the "Default Store Theme"? Is it possible to edit colors?

3. I would like to edit or remove some of the bottom navigation such as "Customer Service" -> "Returns". How to I edit / remove items under "Customer Service", "Extras" and "My Account"? I am unable to find that in the configuration navigation.
