When I paste a text into the editor it is impossible to change font and fontsize from the default.

Many websites and online tools have their own hidden formats used to make text look a certain way. Many word processors also contain hidden formatting. The hidden formatting of websites and of word processors are different and often don’t work well together. The result of copy and pasting from a word processor to a website may be text that looks weird or break the style of the website.

The quick fix is to paste your text without pasting the formatting.

1. Copy your text

Menu
Edit > Copy
Keyboard Shortcuts
Mac: Cmd + C
Windows: Ctrl + C

2. Past your Text without Formatting
Menu
Edit > Paste without formatting/Paste as plain text
Keyboard Shortcuts
Mac: Cmd + Shift + V
Windows: Ctrl + Shift + V

I dont copy and paste from a word processor, I use visual code that give completely unformatted txt files. But whatever I do the editor is fixed on OpenSans 13 and dont let me change it. So what I do now is I create it as html and att it in the source tab. it works but is not the way I want to do it.

So the drop-downs are there but clicking them does nothing?

Assuming you are talking about OpenCart 3.0.4.0: It uses the Summernote editor where it is quite easy to change the fontsize, see screenshot.
