I would like to get the data from the contact form to also add into a new database table, but I am wondering about the security issues of doing this.

Any advice for this?

This would require a modification of the controller catalog/controller/information/contact.php.

The main security issue will be spambots, that's why we recommend the SpamBot Buster extension.

Export/Import Tool * SpamBot Buster * Unused Images Manager * Instant Option Price Calculator * Number Option * Google Tag Manager * Survey Plus * OpenTwig

Yes, other than contact form spam, you should make sure to validate and sanitise your user input before storing it into your database. Other than these, there shouldn't be any major security issues with storing your contact form submissions into your database.
