Since you have a 500 error, you need to find those logs or ask your host to provide the most recent ones to you. Also take note that you are posting in a topic where the case has been solved by another OP user. Therefore, since this topic is also quite old, please create a new topic.

Found the solution to a part of my issue. A vqmod XML that in earlier php had sorted the images by date in the filemanager was no longer compatible with the latest php. Deleted that XML and my filemanager is working again. Still get a 500 error when saving a new product ....

What error log are you looking in?
If OC's error log that isn't the place for 500 errors. It should be the error log set up on the server. Please look for that error log.
