Opencart 2.0.3.2 Order Status Update not saving into DB after server migration and cannot create order in admin panel.
Not sure what's wrong. Any suggestion on where what to check would be appreciated.

Error logs would be my first stop.

Regarding Order Status Update not saving into DB, have you checked in phpmyadmin?

Probably ModSecurity as usual. Ask your host to disable it and then try again.

The MODsec was already turned off.

one thing I did not mention is that I have same website on oldserver still running! I thought off switching to new one once I completely test thje site on new server ..... and then I noticed this issue after checking a lot I noticed that all the status updates and test orders I was making on the website that is on the new server are reflecting on the website that is on the old server.
I am not understanding how this could happen? the DB user info's are completely different!!
Is it because of the CURL ?or something what could be causing it?

Could be that your new site is somehow connection to the old sites database. Maybe your config.php files are wrong in some way.

For order status updates it could be a caching issue or a DNS propagation issue, where a domain lookup is still returning the old server IP.

Check the value of max_input_vars, post_max_size, and upload_max_filesize.
