Product Stock Status

Looking to change a product status when is in stock from "Stock: In Stock" to "Stock: UK/EU Stock"
Stock status when the product is out of stock can be changed easily but not when the product is in stock.

Also, after the price, I would like to add the following "inc VAT"

catalog/language/en-gb/product/product.php and change text_instock value
