Need assistance to solve an unusual problem.

Customer is running a small ship with a restaurant. 2-3 hour cruises, guests pays for meals that includes cost for tickets. One dish is consequently also one ticket.

As with any restaurant, the number of seats are limited. Let's say it's 100 available each cruise and he's offering five different dishes, all different prices.

Before booking/paying, the guests can view a calendar and decide which day and cruise (in case there are more than one the same day) they want to go. When placing the order, there's Date & Time option enabled (required). So, they fill in the day/time, number of dishes, etc. No worries so far, but problems are lurking:

How can we set a max number of seats each cruise and have this number subtracted as guests are booking? Regardless of which dish each of them select? And in plain view, like "it's 23 seats left this cruise" in green or "this cruise is fully booked" in red or similar. And whatever the solution might be, it has to be fairly easy to manage by admin.
