We currently have a very simple setup for shipping
Flat rate of £7 for UK
But we would like to create a slightly higher price for off shore addresses, Isle of man, etc
I know this isn't very complicated but I would prefer someone who know exactly how to do it for me for a fee obviously.

Default theme with slight adjustments.
We have a flat rate setup for UK, however there are some offshore locations which are classed as UK. Isle of Man, etc. It costs a lot more to send to them so we will need a second flat rate that covers them place instead.

Set up separate Geo Zones for your destinations. Then use the Weight Based Shipping (instead of flat) to set prices for each Geo Zone, but only have one weight band.

The problem I have is that When I try to create a GEO zone, it only gives me the option to add countries to it. The non-mainland locations such as Northern Ireland, Isle of Man, Jersey, Guernsey are all part of United Kingdom.
What we need to do it separate all of the above from United Kingdom.

When adding or editing a Geo Zone do you not see the Zone column with a drop down? Change it from All Zones to the first one, then add another line and set to the second zone and so on. http://docs.opencart.com/en-gb/system/l ... /geo-zone/

does not have any additional zones. But you can add it by yourself in admin dashboard System->Localization->ZonesIsle of Man

Just add Isle of Man, Jersey, Guernsey with All Zones. Then add United Kingdom with just the Northern Ireland zones. Then add all the other United Kingdom zones to your mainland Geo Zone.
