Hi, I would need to be able to edit customer orders by going to cancel some ordered products when they have ended, for example.
I do not find the possibility to do it by "edit order" in the admin panel.
What am I doing wrong?

You don't need an extension. Remove button should be there as default.
Possible an extension deactivate that button or was removed by someone.

On my staging site I disabled all extensions from modules, deleted all installed extensions and searched for a new API.
But I still can't edit an order ...

something like:
1) Received an order, sometimes I need to modify the purchased products. For example, cancel a product and insert another in that order.
2) I do not know why .. I send a screen of the single product, I believe the prices are entered accurately.

dotted menu top right of your browser
more tools -> developer tools
click network tab
open that while going to edit the order
go to the products tab
left bottom, you will see an ajax call to
index.php?route=api/cart/products&api_token=[your api token]&store_id=0
click on that on the right side click on "preview" or "response" to see what that call returns

Refine your network panel to the XHR Tab instead of "ALL", then reload the page and repeat your process of trying to edit an order. See what shows up under that panel. Also you have a console error, so click that red X on the top right and see what that says as well.

Click continue see if anything shows up. Looks like a syntax error, you sure you tried disabling all plugins? Any option plugin you are using?

Nothing .. if I click on continue it doesn't do anything, it doesn't go on and it doesn't even visualize anything ..

Again on the red x in the top right click that

Looks like an option add-on. Hard to tell, but looks like they need to escape the apostrophe. You need to figure out which extension then contact them to correct it.
Probably caused by the language translation, but hard to tell from the image. You can try disabling any extensions related to options, refresh your modification cache on each one or otherwise post a commercial request if you are unsure, etc.
