When setting up the options, i chose select.

Go to: Journal-->Dashboard-->Settings-->Product Page-->Product Details-->Product Options-->Push Options, and set all OFF

In Journal 3 Theme if you are not getting the -- Please Select -- option by default on the product page and it is showing you one of the manually entered Options by default then you can follow the steps below to resolve this issue:
Journal -> Styles -> Product Page (in the Catalog options) -> Options (General Tab) -> Select None for Select First Option
