As far as I remember, it shouldn't exceed 160 characters. The rest is simply ignored.

That was my idea to. But when testing the pages with https://www.seotesteronline.com/en/ suddenly there is a change. Until end of december it was 160 characters. But now testing it tells me the description is too short and should be 250/270

Well, this is what one of multiple SEO checking resources says, not Google. If you want to know Google recommendations, you should read them in their SEO documentation.

In December 2017, Google officially increased it's meta description length to circa 300 characters. I am, however, wondering how to change this limit in OC 2.1.0.1 as it cuts off after 255. I've tried changing in the product_description DB table to no avail...
