Is there a way to view/monitor individual options that are "out of stock"? Natively opencart shows me Products that are out of stock, but not options. I often have a single option that is out of stock and never know it, and it hurts my business.

Well, you don't seem to yet understand the OpenCart Concept. If they would
add everything into the default Source, how in the World would they ever generate
some income ?! Or did you believe, that OC is a freeware Project, where Freaks
work for free, to make others rich and famous, just for the plain fun of it ?!
Better come down to real Earth, this is no free heaven here...

Well, it's no sarcasm, just plain facts. OC depends on Extension Sales,
by getting a part of the payments, and if there are no sales, trough the
official OC Marketplace Site, there is no money, for further developments,
and/or paying the rent. And then, OC would be history, it's as easy as that.
