Template overrides

Hello... I'm looking for a way to override .tpl files.
Example... product.tpl to override with a variant that is controlled perhaps by the product ID.

The concept seems simple enough. I've been an active member of the Joomla community for a very long time and this "exception" override rule has been around for a long time and I miss it in OpenCart.

Any suggestions on how I might achieve this would be greatly appreciated.
BTW, I have found a couple of commercial templates, but not to my liking.
