if in a competitive product range, you will have to monitor your competitors, check your and their rankings and work on your site, so its just that bit more better in th eyes of google to stay on top.
just adding products get a nice ranking and be happy wont work, if your comptetition is doing better, you loose rank.
make it a good practice, to review 5 to 10 of your product every day, adding information, making better product descriptions, adding product tags to stay on top

A 301 is a redirect code that tells search engines the page that was here is now located there. If you have just gone live with your store, you probably will not have/need any, so don't worry about them. You need to research keywords customers use to find your type of products and use them throughout your store. Something like google keywords or similar services can help you with that. Look for what phrases customers use most with the highest volume of searches and use them in your store.
No, you do not need any extensions really. Work on building up your keyword content in the store and add extensions later if you find you have issues with something here or there an extension will fix.
