I hand dye silk scarves and clothing, and I'm looking for a way to have all Options (Color or Size) visible on the Product page, whether in or out of stock, and still allow ordering, but indicate to the customer if it's In or Out of stock, so they'll know if they'll get it right away or have to wait 1-3 weeks for me to dye it.

The problem is if I set a product option quantity to 0, it disappears from the Product page.
I already have “Stock Checkout” in admin set to “Yes”, to allow checkout if products are not in stock.
This works for Products but not Options, because Options don’t show up at all to be ordered if out of stock.
So I would have to list every Option as a separate Product.

Ideally, the Product Filter on the Category page would also respond to the availability of each option, so if someone filtered for “In Stock” only the options that are In Stock would show up.

I’m using OC 2.1.0.1 with the Journal 2 theme and I have images for the Color options and text buttons for the Sizes.

I just discovered that by setting the edit product>option>subtract stock to "No" for each option, that it actually does what I want, showing all options, and reflecting the stock in the "Availability" bar when an option is clicked on.
The main drawback is I'll have to manually keep the stock current.
Also, I've noticed the stock quantity of each product option is not reflected in the Journal 2 Super Filter on the category page, but that would require custom coding to achieve.
