I know there are plenty of ways in the 1.5 version, but how do I add a coupon code during checkout for 2.0XX?

You can enable the coupons in the cart by going to --> Extensions --> Order Totals --> Coupons

Then to set up each coupon --> Marketing --> Coupons

I think he means adding the coupon field during the checkout process which is a free mod for 1.5x.

Running Opencart v3.0.3.9 with multi-stores and the default template from https://www.labeshops.com which has links to all my stores.

you need to view cart to enter coupon code

if you go directly to checkout there is no option to add code

By default, yes. But there is a free mod for 1.5x to add it to the checkout which is what I think the OP is looking for for v2

if you dont mind spending $ you can always buy a one page checkout extension
which will then allow you to add coupon at checkout
