Removing steps 4 & 5 in checkout

Is there a way to remove the steps that ask for shipping and payment methods?
I want my site allow customers to make checkout without filling those steps, the thing is I want to contact them personally after checkout.

Can this be done? Does anyone can do it? I'm willing to pay to the one who helps me!
