i have resized pictures, up the res and everything but they still continue to be blurry??
When you hover over they are clear but in the product page they are blurry

I ran into the same problem. It's the dimensions of your photos and they and being stretched or shrunk awkwardly by the software. I'm developing a custom template and all my photos are symmetrical 400x400 but by default they are something different.
E.g. if your photos at 640x280 or something they will go all blurry.

Your Product Image Thumb Size is set to 228 x 228. However on line 347 of your stylesheet.css you have specified a width and height of 380px. the end result is that you are shrinking your 500px original down to 228px and then displaying it at 380px.
Since it's not standard, I'm guessing this css is part of the "megastore" theme you are using so the best solution is probably to set Product Image Thumb size to 380px.

Brilliant worked a treat i changed product image thumb size to 380x380 and the pop up size to 380x380 and now works fine...
HOWEVER
My thumbs in the category section are now blurry:

you're welcome. i'm not sure why your images are being sized like that in the css as it's already a function within the opencart admin panel. this doesn't appear to be a part of the original theme so i can only assume that either you or someone employed by you did this. regardless, it's the wrong approach.
the way your system is set up it's almost guaranteed to cause problems like this. if it was me i'd remove that css and just use the image settings in the admin panel. the two conflict so it's pointless to have both of them fighting over image size.
