yes, it is what the 'Layout Override' is for.
If you want to do this with a lot of categories then it will take a while to setup and you will have a long list of layouts, but it can be done.
Equally, I believe that there are some extensions that are able to do this but I'm afraid that I don't know what they are called so you'll have to search.
