Agreed. Should be fixed before the final release of OpenCart 0.7.9.
How silly... apparently that field MUST be an email address so "cancel and return to blah@blah.com" is actually what you have to have. That's pretty dumb.. but then again it is paypal. If you try to make it a non-email it throws an error.

Paypal integration center for field definition exclaims:
business  - Email address or account ID of the payment recipient (that is, the merchant). Equivalent to the values of receiver_email (if payment is sent to primary account) and business set in the Website Payment HTML.
Note: The value of this variable is normalized to lowercase characters.
