I've been building heaps of templates this past month, Now I want to create templates which are specific to a type of cart: ie: tools, perfumes, clothing.

what types of products is everyone out there selling?

Not selling them personally but some popular templates IMO would be
Toys
Clothing
Electrical equipment
Candy store
Jewellery

One I would like for personal reasons would be a fishing one, but I'm not too sure that would be all that popular as it's quite a niche

Actually a fishing one would be a good idea. It may not be as popular, however people sell fishing products and i've not seen fishing templates. Cheers for the suggestion!

Really, anything that's clean (sans rounded corners, fancy gradients), with solid typography, AND features the product categories on the TOP menu, rather than the side.

I'd love a template that had some sort of larger (sitemap style) product category menu like here:

I'm with steamcrow, (rounded corners, fancy gradients, solid typography, categories on the top).
Also a colorful template for kids would be good (toys, games, baby stuff).
