Can I change "responsive" settings/layout?

Hi,

I have a responsive theme for my opencart store, which can be seen at designer-man.co.uk
however, after adding structure and extensions to the site these all load up when accessing the site via a mobile or tablet, is there an extension of some kind or a way to edit what actually loads up when accessing the site under the responsive theme?

Having some of the extensions loading up when going on the site with an iphone for example is creating a lot of mess.

I'm sure there must be some kind of settings that can be changed to adapt what modules load up?
