Missing Order Statuses

I am unable to update my store settings (System/Settings) as the Order Status fields in Options/Checkout are all blank and the system requires entries in these fields.
I would expect to see selectable tables in Processing Order Status and Complete Order Status and also option lists for Order Status and Fraud Order Status but these fields are all completely blank and nothing is selectable.
How do I go about replacing the default values to these fields?
