So Whilst attempting to change across to using SEO URLs I renamed the .htaccess.txt file to .htaccess and it automatically overwrote the original .htaccess file. (if you can follow that maze)

My trouble now is that no matter what I try in the newly named .htaccess file i come up with a range of errors such as 500 internal server error. 403 security error or php 5.3 required.

Would anyone be able to provide some guidance to aid in reverting this?

If I could recreate the original .htaccess file (not the .htaccess.txt file) would this solve the problems? How would I go about this

there is nothing, overwriting an existing .htaccess file, because no .htaccess exists by default, it's just disabled, by adding .txt, by OC installation-default.

And the .htaccess file has to be matched to your setup, to function, like:
# SEO URL Settings
RewriteEngine On
RewriteBase /shop/


IF yoursite/shop/ is the name of your OpenCart-Subdirectory.
