I've recently been told by my hosting company they are upgrading mySQL to 5.6 and I wanted to see if there would be any issues with my Opencart v1.5.6 when this takes place, or anything I need to be aware about to fix beforehand please?

The site has gone through many bespoke customisations over the years and so an upgrade to newer OC versions is not an option unfortunately, without scrapping it all and starting fresh, so I'm really hoping to avoid that scenario if possible..

When my host upgraded the PHP version a few months ago I did have issues which we managed to fix, but I was hoping someone could tell me if we should expect any issues with the mySQL upgrade, and if so, what needs to be updated now to prevent down-time?

Well, I would just download a virgin Edition of OC v.1.5.6 and an OC v.1.5.6.1, and
compare the content, since 1.5.6.1 + obviously works with later MySql-Releases.
Then, also make sure, to use MySqli. This, because even OC v.1.5.5.1 seems to still work.

Most likely you should be fine with this upgrade. If you can, make a backup of your database right before it happens.
