Most of my sites are copies of the default theme with my own customizations. Easiest for me especially as I now know the default theme pretty darn well 
I have used some of the free themes too (also customized) including bloody-black and dashing.
I probably will fancy things up after I get all my stores online - have 10 of the new ones to do then the 4 that are still running my old cart software switched over - and most of the about 50,000 products I need to add done. My main goal right now is to have everything functional, then seo, then fancy.

Running Opencart v3.0.3.2 with multi-stores and the default template from https://www.labeshops.com which has links to all my stores.
i am using global 1.5 Theme, but it is not getting applied on my website which i have put for Demo , Test and Comapriing all other CMSs Right now for my Exisiting Webiste http://momandmeshop.in .
One of the biggest issue that i face is the load time, anyother themes used on websites make it really heavy , i would recommend check the page weight before finalize the kind of theme you want because it will hinder your Search Results,
