Few customization issues

I have several things that I can't seem to find where to customize. 1) Dates. It's using European display system for some reason. I want it to be in US format, how do I adjust it? (right now it's 22/12/12 and I need it to be 12/22/12) 2) Successful order email. Where do I customize it? Is it doable ...

Oh great, thanks for the tips and thanks for responding Daniel. I was beginning to think opencart is dead.

I know a decent amount of PHP (too rusty at it though, but refreshing myself XD) and recently downloaded PHPStorm, it has a plugin that builds UML, it created a great starting point for me.

Ugh, I just found it. Too rusty with coding.
I had to submit() form. After I modified the code a bit and fixed this line it worked fine:

detailed tracking?

I can't seem to find a function to track what visitor are doing on your site. THings like:
1) Which pages they viewed
2) how long they spent on those pages
3) where they came from (URL)

Am I looking in the wrong place, or is there an addon to enable these?

Cool! How do I enable it though?
I downloaded openshop from your site (not the full one, since opencart was already installed), unzipped it and uploaded to my opencart directory; yet when I login to admin, I don't see CMS and any other features besides the standard admin menus.
